
This is a quick and easy treat/appetizer.
Ingredients
-1 English Cucumber (or 2 regular cucumbers)
-1 can medium black olives - presliced (or you can slice yourself)
-3 oz. cream cheese
-2 Tbl. Ranch dressing (I like the Hidden Valley Ranch Cracked Peppercorn)
Cut off ends of cucumbers and slice the rest into 1/4" to 1/2" thick slices. Set aside.
Soften cream cheese and mix in Ranch dressing. Spread creamy topping on to the tops of the cucumber slices with a knife, angling it at the edges of the cucumber rind so it stays on the top.
Top with olive slices (I like to do three on each).
Chill and serve when ready. Makes about 25 mini pies.
